Manage the beverage program to support hotel operations at all venues. Ensure all products are in compliance with SLS Hotel & Residences Dubai Beverage Program. Estimate beverage consumption and purchase or requisition beverage ingredients and supplies. Monitor and critique the quality and consistency of the beverage product. Only products suitable for luxury hospitality should be served. Identify and address issues related to POS computer systems and equipment used in beverage control operations. Perform regularly scheduled beverage inventories in support of Finance and Accounting systems. Participate in the budgeting process to support beverage operations. Bring innovation and creative ideas to create specialty cocktails for the menus. Ensure prices are established based on competitive survey and analysis and that the tier of beverage prices is logical based on the type of product being served (well call etc.). If unsure about the decision, collaborate with the Food & Beverage Director and Director of Finance. Interact with guests to obtain feedback on product quality and service levels. Support the Marketing team in the development and implementation of beverage promotions for events at the F&B venues. Ensure compliance with hotel and restaurant policies and procedures and local regulations. Monitor beverage controls (pour size, storeroom, etc.) and alert Food & Beverage Director and Director of Finance of any issues. Collaboratively work with the food & beverage team to provide an unsurpassed experience for our guests.
Qualifications:
Minimum 23 years of food & beverage manager experience required. Minimum 23 years of experience working in the beverage/spirits industry required. One to two years in a public contact position, preferably in an upscale or lifestyle brand hotel. Minimum of 12 years of business experience; P&L and budgeting required.
