About The Position
The Beverage Manager forms part of the Food & Beverage leadership team at Wynn Al Marjan Island, contributing to both strategic and operational decisions within the division. This position is responsible for supervising all resort bar operations as well as the upkeep of beverage menus. Main duties involve ensuring high beverage quality and service standards, leading and developing bar staff, tracking performance in line with the annual budget, and managing labour costs and operating expenses associated with bars and beverage initiatives.

The Primary Duties And Responsibilities Of This Role Are

  • Work with Executive Director Beverage/Assistant Director Beverage to establish par levels for supplies, liquor, beer, wine and equipment, completing requisitions to replenish shortages or additional items needed for the anticipated business.
  • Work with Executive Director Beverage/Assistant Director Beverage on implementation of policies, operating procedures, training programs, directives, menus, work schedules, rules and regulations for the beverage staff and personnel
  • Maintain complete knowledge of all liquor brands, beers and non‐ alcoholic selections available in outlets, the characteristics and description of every wine/champagne by the glass and major wines on the wine list, designated glassware and garnishes for drinks, all bar menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation and prices
  • Work with Executive Director Beverage/Assistant Director Beverage and Brand Partners to review and establish standards, staffing levels, recruitment strategy, alignment with hotel policies and SOPs, etc.
  • Maintain the highest standards of health, sanitation and cleanliness within all areas of Beverage. Maintain complete knowledge and strictly abide by state liquor regulations.
  • Manage beverage inventory and cost control
  • Work with Executive Director Beverage/Assistant Director Beverage on the design and direction of special event beverage service set-up, working closely with the special events and banquets team
  • Be aware of internal and external conditions and industry innovations and best practices and apply this knowledge as appropriate in managing the organization's beverage operations
  • Work with the Executive Director Beverage/Assistant Director Beverage on maintaining the financial performance of the Beverage department and conducting P&L analyses
  • Work with Executive Director Beverage/Assistant Director Beverage to manage the annual budget for the beverage operation, including all beverage related revenue and cost accounts
  • Work with Executive Director Beverage/Assistant Director Beverage to monitor the execution of key operational processes, such as training, quality/recipe control, steps of service, inventory and ordering processes
  • Any other tasks / duties as assigned

About You
The ideal candidate for this position will have the following experience and qualifications:

  • A minimum of 5 years' experience managing bars and high-volume operations
  • Demonstrated ability to oversee inventories for large-scale establishments
  • Ability to manage inventories of large operations.
  • Proven track record of fostering strong relationships with team members, guests, and management
  • Excellent communication and presentation skills

What will I be doing?
As Beverage Manager serving Waldorf Astoria Ras al Khaimah, you will be responsible for managing and assisting all food and beverage outlets according to Waldorf Astoria Ras Al Khaimah Service Standard, to consistently deliver maximum profit and guest satisfaction. This position is concerned with the responsibility of the quality, profitability, and sales of the overall beverage experience in the property. Responsible for beverage knowledge training within the property and therefore working closely with the L&D Assistant Director and any external Beverage consultants or suppliers. Specifically, you will be responsible for performing the following tasks to the highest standards:

  • Ensure that all outlets have an updated cocktail and beverage list.
  • Ensure that cocktail recipe cards are available for all cocktails in all outlets.
  • Ensure that costings are done for the entire beverage menu in consultation with Director of F&B
  • Keep an updated master beverage list with costs, selling prices, including cocktails.
  • Ensure that all bar equipment (glassware, fridge, cellars, etc.) in the outlets is in sufficient quantity, in proper working order and cleaned/maintained properly.

  • Work closely with Venue Managers and Outlet bartenders towards an always better beverage experience.
  • Build a yearly beverage activation calendar which includes both guest oriented promotions and dinners, as well as team member trainings.
  • Identify and suggest all possible ways to increase quality, range and value for money of the all the food and beverage items available throughout the property.
  • Assist guests to choose cocktails, other beverages and cigars according to their requirements.
  • Seek to minimize costs through correct use and handling of hotel property and equipment.
  • Ensure achievement of beverage revenue and profit plan of the department, detailed in the revenue plan for the year.
  • Set up, together with the Food & Drinks Director, a comprehensive beverage incentive plan for the property to drive upselling potential and to positively drive team moral.
  • Perform periodical micros checks to ensure items are fully updated, in order to produce accurate bills and reports.
  • Assist, whenever required, the cost control team to order appropriate FOC stocks, this to ensure proper stocking.
  • Ensure appropriate stock rotations.
  • Work closely with accounts for the monthly stock take.
  • Work closely with purchasing and store for the order, delivery, and control of beverages received.
  • Be fully aware of the objectives of the property specifically departmental business objectives and targets related to beverages, both alcoholic and non-alcoholic.
  • Attend and actively participate in training sessions and monthly communication meetings from the various venues
  • In agreement with venue managers, conduct on monthly basis all beverage related training sessions and/or source the appropriate trainer.

Job Description:

The Lead Beverage Specialist is responsible for overseeing beverage operations, ensuring a bold and innovative guest experience. This role includes managing beverage menus, service standards, supplier relations, and staff training to drive profitability and creativity.

Responsibilities:

  • Beverage Operations: Oversee day-to-day beverage service across restaurants, lounges, bars, and events.
  • Develop and update beverage menus to align with brand standards and market trends.
  • Ensure consistent delivery of premium guest experiences through innovative beverage offerings.
  • Financial Management: Manage beverage cost, inventory, and wastage in line with budget and financial goals.
  • Work closely with procurement and suppliers to source high-quality products at competitive prices.
  • Monitor and analyze sales performance, preparing regular reports and recommendations.
  • Team Leadership & Training: Lead, coach, and inspire bartenders and beverage staff to deliver exceptional service.
  • Design and implement training programs on mixology, wine knowledge, and service etiquette.
  • Promote a culture of creativity, innovation, and collaboration within the team.
  • Guest Experience & Innovation: Create signature cocktails and beverage concepts that enhance the lifestyle positioning of the establishment.

Qualifications:

  • Degree or diploma in Hospitality Management or related field.
  • 4–6 years of progressive experience in beverage management, ideally in luxury hotels or lifestyle resorts.
  • Strong knowledge of wines, spirits, cocktails, and non-alcoholic beverage trends.
  • Proven track record in managing costs, inventory, and supplier negotiations.
  • Exceptional leadership, training, and team-building skills.
  • Creative flair with an eye for detail and passion for guest satisfaction.
  • Excellent communication and interpersonal skills; fluent English required (additional languages an advantage).
  • Flexibility to work evenings, weekends, and holidays as required.
