Manage the beverage program to support hotel operations at all venues. Ensure all products are in compliance with SLS Hotel & Residences Dubai Beverage Program. Estimate beverage consumption and purchase or requisition beverage ingredients and supplies. Monitor and critique the quality and consistency of the beverage product. Only products suitable for luxury hospitality should be served. Identify and address issues related to POS computer systems and equipment used in beverage control operations. Perform regularly scheduled beverage inventories in support of Finance and Accounting systems. Participate in the budgeting process to support beverage operations. Bring innovation and creative ideas to create specialty cocktails for the menus. Ensure prices are established based on competitive survey and analysis and that the tier of beverage prices is logical based on the type of product being served (well call etc.). All prices should be approved by the General Manager and Food & Beverage Director. Take advantage of special vendor pricing that may be available including volume purchases if reasonable. If unsure about the decision, collaborate with the Food & Beverage Director and Director of Finance. Ensure that the Director of Finance and Food & Beverage Director are aware of any products with low turnover (i.e. over 90 days old in inventory) so that a plan can be developed to proactively sell the product through specials, banquets, or reduced pricing. Interact with guests to obtain feedback on product quality and service levels. Support the Marketing team in the development and implementation of beverage promotions for events at the F&B venues. Ensure compliance with hotel and restaurant policies and procedures and local regulations. Qualifications:

CANDIDATE PROFILE
Education and Experience
High school diploma or GED; 4 years experience in the food and beverage culinary or related professional area.
OR
2year degree from an accredited university in Food Service Management Hotel and Restaurant Management Hospitality Business Administration or related major; 2 years experience in the food and beverage culinary or related professional area.

Developing and Maintaining Budgets
Develops and manages all financial employee engagement and guest satisfaction plans and actions for Food and Beverage departments.
Maintains a positive cost management index for kitchen and restaurant operations.
Utilizes budgets to understand financial objectives.
Leading Food and Beverage Team
Manages the Food and Beverage departments (not catering sales).
Supervises and manages employees. Manages all daytoday operations. Understands employee positions well enough to perform duties in employees absence.
Utilizes interpersonal and communication skills to lead influence and encourage others; advocates sound financial/business decision making; demonstrates honesty/integrity; leads by example.
Oversees all culinary restaurant beverage and room service operations.
