Job Description

POSITION OBJECTIVE: Responsible for the basic preparation in a given section in the kitchen.

Key Responsibilities
  1. Cooperates and works together with the senior cook in the production of food in his section.
  2. To assist the senior cook in performing his/her duties efficiently.
  3. To collect required food items from the stores and the butchery.
  4. Preparing mise-en-place according to direction given by the section head.
  5. To follow the rules and regulations of hygiene and sanitation in the kitchen.
  6. Following and attending training classes and keeps records of new recipes and cooking procedures.
  7. Maintains equipment in good, clean conditions and ensures repairs and maintenance are regularly carried out.
  8. To maintain food cost within the budget by controlling waste without compromising standards.
  9. Performs any other duties, which may be allocated from time to time.

  1. Maintain the required standard of operational hygiene according to cleaning rotas at all times.
  2. Be aware of the Restaurant policies and procedures relating to health, hygiene, and fire life safety and ensure your direct reports do the same.

**What will I be doing?**
As a Commis Chef, you are responsible for preparing and presenting high quality dishes to deliver an excellent Guest and Member experience. A Commis Chef will also be required to prepare all mis-en-place and contribute to departmental targets. Your main duties and responsibilities are:

  • Prepare and cook dishes delegated as your responsibility by the Chef in charge

  • Ensure that specification of portion size and quantity of particular dish has been followed, as set out in the recipe index
  • Complete the daily check list received by the Chef in charge regarding mise-en-place and food storage

  • Keep section clean and tidy at all times, and make sure all items are labelled with dates
  • Help to prevent waste of food and over-production to mise-en-place, and keep food order from store or supplies to a minimum
