Job Summary:
Chef TournantWe are seeking an experienced Chef Tournant to oversee the food production in various kitchen sections. This is a key leadership role that requires exceptional culinary skills, leadership abilities, and a strong focus on quality control.
Responsibilities:- Directs, coaches, supports, supervises, and evaluates all direct reports to ensure high-quality food products are produced consistently.
- Coordinates and supervises team members assigned to their section, assigns and delegates tasks accordingly to optimize productivity and efficiency.
- Undertakes daily recipe reviews to maintain accurate and up-to-date recipe folders.
- Responsible for follow-through on any request within their area of responsibility received from their supervisor or manager on duty;
- Control production levels and recommends ideas for improvements and better cost controlling to minimize waste and optimize resources.
- Prepare daily electronic food requisitions needed for their section production and countercheck deliveries for accuracy.
- Must be able to oversee any main section (Sauce, Entremetier, Fish, Roast, Outlet CDP, Tournant, and Cold Kitchen) and its entire food production to ensure seamless operations.
- Maintains and ensures that Public Health regulations are followed according to company standards and expectations (referring to US, Anvisa, Shipsan, Canadian, Australian, etc.) and always followed within their section;
- Ensures that the HACCP program is carried out correctly to minimize the risk of foodborne illnesses;
- Maintains their assigned area in preparation for announced or unannounced United States Public Health type inspections either done by the Food & Beverage Director or the actual inspectors.
- Responsible for cost containment through the proper use, handling, and maintenance of records, reports, supplies, and equipment to optimize resources.
- Identifies potential expense reductions through cost control to minimize unnecessary expenditures.
- Analyzes operational problems and establishes controls to prevent reoccurrence.
- Reviews timesheets and forwards them to the Executive Chef for approval to ensure timely payment.
- May prepare a variety of reports and letters utilizing personal computer systems and equipment.
- Ensures that items are requisitioned in correct quantities, within acceptable timeframes, and in accordance with established control procedures to minimize delays and optimize productivity.
- Conducts workstation spot checks to ensure items are correctly stored to minimize deterioration and waste.
- Monitors and manages the various assigned workstation functions to ensure efficient service and conformance to standards.
- Monitors the assignment of duties and responsibilities to staff members to ensure adequate staffing and workload management.
- Observes and evaluates staff and work procedures to ensure quality standards and service are met to maintain a positive work environment.
- Makes recommendations regarding personnel actions such as new hire requests and discharges to ensure adequate and continuous staffing.
