**OUR EXPECTATIONS FROM THE ROLE:**
+ Demonstrated knowledge of commercial Kitchen & Laundry equipment, and ancillary systems
+ Good understanding of Electrical & Mechanical Code (both local, IEEE and ASME) & an ability to Read and follow blueprints / schematics
+ Extensive Hands-on Kitchen & Laundry Equipment maintenance experience, inclusive use of relevant Trade Tools, equipment & instrumentation
+ Proven experience leading a multi-disciplined technical team

+ Need to have good knowledge of fault finding and rectification in equipment electronic control boards.

+ To provide hands on support of work assignments to ensure that work is completed in a timely manner and within specifications

+ To execute all preventive maintenance duties as outlined in the Preventative Maintenance Program and follow and enforce procedures that ensure the security of inventory such as tools, supplies, equipment etc
+ To replenish Kitchen & Laundry supplies and inventory in a timely and efficient manner, and minimize waste; and make sure equipment is prepared and operational for the following day's work.
+ Adhere to all company required purchasing policies and controls to stay within budget guidelines, as assigned.
+ Follow prescribed safety procedures and emergency plans for personnel and equipment by the company and according to local laws and regulations.
+ Participate in effective energy management programs and efficient use of equipment and utilities in the hotel.
+ In the absence of Kitchen & Laundry Supervisor, conduct a daily briefing with Kitchen & Laundry section team members on current key activities.
+ Anticipate and respond to guest issues and establish proactive processes to promote guest satisfaction.
+ Liaise with 3rd party vendors/contractors, as assigned
+ Maintaining a safe and hygienic work environment & Performing related duties and special projects as assigned.
+ Ensuring all Team associates has the proper supplies, equipment and uniforms.
+ Establishes and maintains open, collaborative relationships with Team associates.
+ Ensures that regular on-going communication occurs with associates in order to create awareness of business objectives, communicate expectations and recognize performance.

**POSITION SUMMARY**
Respond and attend to guest repair requests. Communicate with guests/customers to resolve maintenance issues with little to no supervision. Perform preventive maintenance on tools and equipment, including cleaning and lubrication. Visually inspect tools, equipment, or machines. Carry equipment (e.g., tools, radio). Identify, locate, and operate all shut-off valves for equipment. Maintain maintenance inventory and requisition parts and supplies as needed. Assure each day's activities and problems that occur are communicated to the other shifts using approved communication programs and standards. Display advanced ability to read standard blue prints and electrical schematics concerning plumbing and HVAC. Display above average engineering operations skills and strong general mechanical ability. Display proficiency in at least three of the following categories, above average skills in three more of the following categories and basic skills in the remaining categories: air conditioning and refrigeration, electrical, mechanical, plumbing, pneumatic/electronic systems and controls, carpentry and finish skills, kitchen equipment, vehicles, energy conservation, and/or general building management. Display solid knowledge and skill in the safe use of hand and power tools and other materials required to perform repair and maintenance tasks. Safely perform highly complex repairs of the physical property, electrical, plumbing and mechanical equipment, air conditioners, refrigeration and pool heaters - ensuring all methods, materials and practices meet company standards and Local and National codes - with little or no supervision. Troubleshoot and perform repairs on all types of equipment (e.g., pump and motor replacement), plumbing (e.g., plunge toilets and unclog drains), electrical equipment including lamps, air conditioners, HVAC equipment, cosmetic items, extension cords, vacuum cleaners, internet devices, replace electrical switches and outlets, and program TV's. Use the Lockout/Tagout system before performing any maintenance work. Display advanced knowledge of all engineering computer programs related to preventative maintenance, energy management, and other systems, including devices that interact with such programs. Perform advanced troubleshooting of hotel Mechanical, Electrical, and Plumbing (MEP) systems. Display the ability to train and mentor other engineers as necessary. Display ability to perform Engineer on Duty responsibilities, including readings and rounds.
Follow all company and safety and security policies and procedures; report any maintenance problems, safety hazards, accidents, or injuries; complete safety training and certifications; and properly store flammable materials. Ensure uniform and personal appearances are clean and professional, maintain confidentiality of proprietary information, and protect company assets. Welcome and acknowledge all guests according to company standards, anticipate and address guests' service needs, assist individuals with disabilities, and thank guests with genuine appreciation. Adhere to quality expectations and standards. Develop and maintain positive working relationships with others, support team to reach common goals, and listen and respond appropriately to the concerns of other employees. Speak with others using clear and professional language. Move, lift, carry, push, pull, and place objects weighing less than or equal to 50 pounds without assistance and heavier lifting or movement tasks with assistance. Move up and down stairs, service ramps, and/or ladders. Reach overhead and below the knees, including bending, twisting, pulling, and stooping. Enter and locate work-related information using computers. Perform other reasonable job duties as requested.
PREFERRED QUALIFICATIONS
Education: High school diploma or G.E.D. equivalent and vocational or technical background.
Related Work Experience: Extensive experience and training in general maintenance, electrical or refrigeration, parts inventory and requisition, exterior and interior surface preparation and painting.
At least 2 years of hotel engineering/maintenance experience.
Supervisory Experience: No supervisory experience.
License or Certification: Valid Driver's License
REQUIRED QUALIFICATIONS
Universal Chlorofluorocarbon (CFC) Certification
Must meet applicable state and federal certification and/or licensing
requirements.

JOB PURPOSE

The Kitchen Sous Chef is responsible for overseeing the food production process, ensuring the timely delivery of high-quality products. He/she researches product enhancements, interacts with suppliers, trains kitchen staff, and potentially supervises multiple cooks or assistants.

RESPONSIBILITIES

  1. Coordinate, organize, and oversee meal production to exceed customer expectations. Ensure dishes meet quality, presentation, and timeliness standards, taking immediate actions to prevent unsatisfactory outcomes.
  2. Provide operational support by executing various routine tasks within established systems. Liaise with suppliers, receive goods, check expiry dates, verify specifications, ensure proper storage, conduct monthly inventories, and sign acknowledgment receipts as needed.
  3. Monitor production and set par levels to maintain acceptable wastage and variance levels.
  4. Follow the organization’s HS&E policies, procedures, and mandatory instructions. Implement security, fire, and safety protocols according to established rules and regulations. Report incidents to the appropriate hierarchy as necessary.
  5. Oversee station employees to ensure consistent compliance with standard recipes, portion sizes, cooking methods, quality standards, kitchen rules, hygiene regulations, and organizational policies.
  6. Assist in supervisory tasks by planning and assigning tasks, setting deadlines, monitoring quality, and conveying team requests to higher-ups. Ensure the team meets defined objectives and standards, providing guidance on best practices and procedures.
  7. Provide routine sales support services and actively promote additional products while working in the butcher shop.
  8. Conduct research and propose innovative recipe ideas to senior management to help achieve or surpass established targets.
  9. Train team members on all key responsibilities in the kitchen, such as new menu alignment, and ensure compliance with statutory regulations.

LANGUAGE & TECHNICAL SKILLS

  • Fluency in English.
  • Fluency in Arabic is a plus.

Specific Skills

  • Technical training certification is a plus.
  • Level three.

EDUCATION

Technical degree in Hospitality Management, or a related field.

EXPERIENCE

Two to four years of experience in F&B Operations, or a similar role.
