**General Kitchen**
+ Ensure the quality of the food items and notify manager if a product does not meet specifications.
+ Communicate any assistance needed during busy periods to the Chef to ensure optimum service to guests.
+ Monitor the quantity of food that is prepared and the portions that are served in to control food waste and ensure that good food is not thrown away.
+ Check and ensure the correctness of the temperature of appliances and food using thermostats and thermometers, including monitoring freezer systems, such as fans, drains, and doors, for proper operation, and report issues or problems to facility management.

+ Prepare all potentially hazardous foods at the correct temperature according to the HACCP guidelines.
+ Maintain kitchen logs for food safety program compliance (e.g., A1, A2, A3 etc.).

**Food Preparation**
+ Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist, establishing priority items.
+ Test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils.
+ Weigh, measure, and mix ingredients according to recipes or personal judgment, using various kitchen utensils and equipment.

THE POSITION: Organizes kitchen operations and prepares and serves a range of dishes, whilst supervising junior members of the Kitchen Brigade. Promotes the work culture and the company's core values.

About The Job

Based at the Mandarin Oriental Downtown, Dubai within the Food & Beverage Department in Dubai, the Chef de Partie will be responsible for preparing and presenting high-quality dishes for colleague meals. And will ensure that all food is prepared with consistency, attention to detail, and delivered in a timely manner. The Chef de Partie reports to Sous Chef.

As a Chef de Partie, you will be responsible for the following duties:

  • Take full ownership of food quality, presentation, and timely delivery within assigned kitchen section.
  • Supervise and coordinate with other kitchen sections to ensure seamless operations.
  • Monitor compliance with quality standards, hygiene, stock management, and culinary techniques.
  • Maintain and enforce up-to-date plating guides aligned with dish descriptions and presentation standards.
  • Handle daily ordering of ingredients and promote effective interdepartmental communication.
  • Uphold and comply with all health, food safety, and hygiene standards in line with hotel policies, HACCP requirements, including those mandated by UAE Municipality.

As a Chef De Partie, We Expect From You
  • High School qualification required; Degree or Diploma in Hospitality/Culinary Arts preferred.
  • At least 3 years' experience in a 5-star hotel or high-end restaurant setting.
  • Demonstrated expertise as a Chef de Partie in fast-paced, fine-dining kitchens.
  • International work exposure in two or more regions (Asia, Europe, North America; Middle East preferred).
  • Strong culinary foundation in dish preparation, cooking, and presentation techniques.
  • Knowledge of HACCP standards; experience with hotel pre-opening or renovation is a plus.

About RIKAS Group

RIKAS Group is known for creating some of the region's most iconic dining destinations, combining innovation, quality, and exceptional hospitality. As we expand into Ras Al Khaimah with our new project, we are seeking skilled and passionate Chef de Parties (CDPs) to join our opening culinary team and deliver outstanding cuisine in line with RIKAS standards.

Role Purpose

The Chef de Partie will be responsible for running a specific section of the kitchen, preparing dishes to the highest standards, and supporting the Sous Chef and Head Chef in daily operations. This role is based in Ras Al Khaimah and requires a talented individual who thrives in a high-paced, luxury dining environment.

Key Responsibilities Food Preparation & Service
  • Prepare, cook, and present dishes consistently to RIKAS quality standards.
  • Manage a specific section of the kitchen (hot, cold, pastry, or grill).
  • Ensure portions, presentation, and recipes are followed accurately.
  • Assist in creating new menu items and seasonal specials when required.
Operational Duties
  • Maintain mise en place, ensuring readiness for each service.
  • Monitor stock levels, reduce waste, and communicate shortages promptly.
  • Ensure kitchen equipment and work areas are clean, safe, and in proper condition.
  • Work closely with fellow chefs and service staff to ensure smooth operations.
Standards & Compliance
  • Uphold hygiene, food safety, and sanitation standards at all times.
  • Follow RIKAS Group's kitchen policies, SOPs, and safety regulations.
  • Maintain grooming and professional behavior in line with company culture.
  • Support training and guidance of Commis Chefs and Demi Chefs as required.
Qualifications
  • Previous experience as a Chef de Partie in a premium or fine-dining restaurant (minimum 2–3 years).
  • Strong knowledge of cooking techniques and kitchen operations.
  • Ability to manage a section independently while working as part of a team.
  • Passion for food, creativity, and a commitment to excellence.
  • Professional appearance and ability to work under pressure.
  • Fluency in English is required; additional languages are an advantage.
  • Flexibility to work varied shifts, including weekends and public holidays.
  • Must be available to join immediately in Ras Al Khaimah.
